Zucchini and eggplant cheesecake/ Tarta cu dovlecel si vanata

I’ve seen on a Romanian website (Savori urbane) a similar tart that was looking absolutely delicious but it was made with a white bechamel sauce and since I was a kid I new it is not that healthy to eat it. I don’t know if it was just a myth or the ugly truth but since I am on a diet anyway I have decided to change a little bit the recipe. The result is as nice as the tart looks!

  • 1/2 zucchini
  • 1/2 eggplant
  • 2 eggs
  • 3 tbsp flour
  • 500 gr fromage frais
  • 1/2 cup basil
  • 1/2 chopped chives
  • salt
  • 150 gr low fat mozzarella (6%)

Cheesecake

1. Mix the eggs, fromage frais, salt, flour, chopped basil and chives together and add the batter into a tart pan

2. Slice the zucchini and the eggplant and cut them in halves lengthwise

3. Add the slices on the cheese mixture with the dark side out

4. Add the mozzarella cheese over the tart

5. Bake the tart for 30 minutes

For Dukan diet, replace the flour with oat bran and/or wheat bran and skip the mozzarella cheese if necessary!

Acum cateva zile am vazut pe un site romanesc de gatit,(Savori urbane) o tarta asemanatoare cu zucchini care insa era facuta cu sos bechamel. De cand sunt mica stiu ca nu prea e sanatos sa mananci un astfel de sos si cum oricum sunt la dieta, m-am decis sa schimb putin reteta. Rezultatul e la fel de bun precum arata tarta! Absolut delicios!

  • 1/2 dovlecel
  • 1/2 vanata
  • 2 oua
  • 3 linguri faina
  • 500 gr branza proaspata de vaci
  • 1/2 ceasca busuioc
  • 1/2 ceasca arpagic tocat
  • sare
  • 150 gr mozzarella (6%)

Cheesecake
1. Amestecati ouale, smantana, sarea, faina, busuiocul taiat si arpagicul si adaugati aluatul intr-o tava de tarta

2. Feliati dovleceii si vinetele si se taiati-le in jumatate pe lung

3. Adaugati feliile peste amestecul de branza cu coaja in sus

4. Adaugati branza mozzarella

5. Coaceti tarta timp de 30 min

Pentru cei care tin dukan, puteti inlocui faina cu tarate de ovaz si/sau tarate de grau si daca este necesar renuntati la mozzarella.
