Zucchini and squash pasta/ Paste cu dovlecei

Zucchini pasta

I’ve been craving a lot for pasta the past two week and when I saw those gorgeous squashes at the supermarket I have instantly thought of a nice pasta dish, with grilled squash, garlic, tomatoes and fresh basil. This is perfect for dinner, light and yet delicious. It’s super easy to make so let’s get started:

Zucchini pasta

  • 100 gr whole wheat pasta
  • 1/4 yellow squash
  • 1/4 zucchini
  • salt
  • 10 gr butter
  • 2 garlic cloves
  • 5 cherry tomatoes
  • 2 tbsp pizza sauce
  • 1 tbsp shredded low fat mozzarella cheese
  • 6-7 fresh basil leaves

Instructions

  1. Add some water and salt in to a large sauce pan and bring it to a boil
  2. Add the pasta and let them cook as long as the manufacturer mentioned on the package
  3. In the meanwhile, melt the butter into a pan, add the chopped garlic cloves and cook for about a minute
  4. Add the squashes chopped in the shape you want and let them cook until they become nice and soft
  5. Add some salt and pepper (f you want) and the pizza sauce
  6. When the pasta is done, drain it and add into the pan and let it on the heat for 1-2 minutes
  7. Chop the cherry tomatoes in quarters and the basil leaves
  8. Mix everything together on a plate
  9. Garnish with mozzarella cheese and Enjoy!

  • 1/4 dovlecel galben
  • 1/4 zucchini
  • sare
  • 10 gr unt
  • 2 catei de usturoi
  • 5 rosii cherry
  • 2 linguri sos de pizza
  • 1 lingura mozzarella razuita cu grasime scazuta
  • 6 frunze busuioc proaspat

Instructiuni

  1. Puneti pe foc o oala suficient de incapatoare, adaugati apa si sare si lasati-o sa fiarba
  2. Cand apa clocoteste adaugati pastele si gatiti-le cat scrie pe ambalaj
  3. Intre timp, intr-o tigaie, topiti untul si adaugati cateii de usturoi curatati si taiati in doua si caliti-i cam 1 minut
  4. Adaugati dovleceii taiati in forma dorita si lasati tigaia pe foc pana acestia devin moi
  5. Adaugati sare si piper (daca doriti) si cele doua linguri de sos de pizza
  6. Cand pastele sunt fierte, scurgeti-le si adaugati-le in tigaie peste legume si mai lasati tigaia pe foc 1-2 minute
  7. Taiati rosiile in patru si maruntiti busuiocul
  8. Amestecati totul pe o farfurie
  9. Presarati mozzarella si Savurati!
